Can anyone identify what this is? After cooking the meat(shoulder/leg) I cut into and was hit with a horrific smell, absolutely putrid. The stuff coming out looked grainy and was a  greyish/white color. Thoughts??


 
that looks like the gland that is normally removed by a butcher. being a wild hog this was probably not done. Was it just that one piece you cut out like that? hard to tell exactly from the pic but to me it definitely looks like the gland. And they stink like all heck too.
