This is another one that could find itself in any number of different sub forums so I'll once again defer to the mods to move it accordingly if they deem it necessary.

The last several months have been pretty insane for us. With time to cook (and post to SMF) being limited, I have come up with several quick, easy, and very tasty meals to throw together in the evenings. This is one that I found very noteworthy. Didn't take long to prepare or cook but was REALLY tasty and filling. It also has a lot of visual appeal....to me at least :-) Apologies for the lack of creativity with the name of this. We are having a hard time coming up with names for all the new stuff I've been putting together recently....but I really don't see a problem with that :-)

Base ingredients that I started with

9x9 baking dish sprayed with non-stick cooking spray and lined with torts. Large burrito sized one on the bottom and 3 smaller ones cut in half to line the edges

Spread the re-fried beans on the bottom

1# of ground chuck** browned, drained, and seasoned with the taco seasoning

Add the Ro Tel tomatoes

A couple handfuls of tortilla chips crumbled up to add a crunchy texture

A hefty dose of white cheddar cheese

(**Several months ago we completely stopped buying pre-ground meat from the store. I now buy all USDA Prime Chuck Roast and grind it myself, vac seal it, and put in the freezer. We use it for dishes like this as well as mixing and pressing all of our gourmet hamburgers. There just is no comparison.)

Well, there it is. A quick, easy dinner to prepare that hits on all of the aspects of texture and flavor, and complexity. We really enjoyed this one!! There were leftovers that went into the freezer and were eaten later. Those were just as flavorful as the first round.

Sure has been nice to have a few minutes to spend with my SMF family over the holidays. I've missed being here and it's been great to do a little catching up.

Dinner is served!!

Robert awesome looking quick meal. My wife makes one very similar to that on those busy days but into the oven it goes. Good to see u r getting some time to spend on SMF.

Thank you for the kind words. It really has been nice to spend some time with my extended family. We have no idea what the new year will bring so I'm taking advantage of the time I have.

Oven? What's an oven? Oh wait....I think it's that electrified hole in the wall at the corner of the kitchen where my wife heats up garlic bread :)

Interesting that you mention lasagna. I seriously considered doing a version of this and layering all of the ingredients between tortillas, as you would a traditional lasagna. I have not done it thinking that it may be overboard with the torts. I may need to re-think that :-)

Yep, layering it 2-3xs makes an awesome Mexican Lasagna.
We use corn tortillas and shredded beef.
For the beef, either beef cheek or chuck roast, smoked or Crock-Pot.
Sometimes alternate a layer with chorizo.
Another nice touch is to use whole beans, pintos and/or black.

Looks great points for sure! We do one similar and call it taco pie too. Use crescent rolls with ground taco meat on bottom then a layer of sour cream cheddar cheese and then Fritos on top. Like the hot rotel layer though gonna have to give that a try

The taco pie looks great... like! I’m going to try this soon. I can see some smoked barbacoa, black beans, and smoked cheddar in there for sure! My wife makes homemade tortillas that will work well.
