Smoking a whole pork picnic today for some pulled pork. I don't bother removing the skin anymore. Comes right off in one piece after smoking. Keeps the meat nice an moist. Anyway, i sprayed it with veggy oil,

sprinkled a little rub on it and it went into the smoker about an hour ago. Running at 260° with apple pellets.
 
Looking good, I remove it because the smoke wont go through it, ymmv
 
About 8 hours in and just about to hit the stall. Gonna raise temp to 275° to power thru it. The Auber unit has been holding steady all day @ 260. Its gonna be a late night i think. Probably wont finish till midnight.
 
Well here it is folks. Finished around 11:15 last night . Foiled, wrapped in a blanket, and rested in a cooler til around 8 am. Sorry no pics of it coming out. Its pulled pork. You know what it looks like . Anyway i made up some of jj's finishing sauce to finish off . My wife is the real cook in the family. She made home made macaroni salad, baked beans with bacon, fried egg plant, and fresh corn.
