Just for space and time saving considerations , I like to split a turkey and do half on each rack of my WSM . Speeds up the cooking big time. Saves charcoal too. Turkey comes out moist and juicy with great crisp skin.
I like to spatchcock myself. I think there is no good reason to keep a bird looking like a bird in the smoker other than for presentation. If it cuts time and fuel. Cooks more evenly. tastes just as good. Why not?
I spatch my birds. I feel that a spatched bird cooks evenly. You also cut down on the cooking time which is nice.
As for presentation a spatched bird gets lots of compliments, but we typically carve the bird prior to putting it on the table so not a big deal in our house.
Now that I can get mini pots here I will make one a huli huli pit!
About eight or nine years ago I helped with a huli huli chicken fundraiser here for my daughter's soccer team and we did a ridiculous number of brined, spatched and spogged chickens!
I went and got another pot and had all the parts in the garage! I still have to attach the lid and cut it out. I'll paint it but I won't be using any stickers for this one.
