I have a strange obsession with classic German sausage making. I try to follow the German government publication guide to meats and meat products-- Leitsätze für fleisch und fleischerzeugniße. Most recipes call for pure back fat. I can absolutely taste the difference.

I remember those days when I was in NC... I miss them. It's not so easy to come by in SoCal.
