I have a maverick 732. I started having problems with the BBQ temp going crazy. Too low then too hot. I bought a new probe. It worked twice and now it's doing the same thing. Any idea what might be wrong? I bought a replacement meat probe too and right now it's doing a good job substituting.
 
Are you watching the probes, I know some people have had issues when the probes get wet. IF all else fails call the Manufacturer, I have had great customer service from them.

I don't think they've gotten wet but I'm not always the one to put them away. I'll try customer service tomorrow. They were closed yesterday when I tried. thanks
 
Sometimes if the meat is above the probe the drippings will land on it and give those kind of results... just throwing out idea's
 
Morning ecuizbest,  Where are you placing the probes and how?  I nave a 732 and the meat probe and the BBQ probe read differently if you put them next to each other during temp changes but if you give them some time at the same temp they read the same.  When my heat element comes on my BBQ probe runs crazy as the wave of heat hits it but settles down after the element shuts down. I have a pid and the probe from it reads slower then the mav probe.   The meat probe is also slower reading changes so it won't change as fast as the BBQ probe.  Since you have extra probes try using two BBQ or meat probes at the same time and you will see there won't be as much difference.  I have temp differences of 20 degrees on the same rack from side to side and top rack to bottom rack when the element is on but if you take your smoker up to say 250* then change the controller to say 200* your temps will even out everywhere inside as it cools.   The way the heat moves through your smoker depends on so many things like at, wind, placement of items in your smoker. water in the pan, temp of meat when put in, the temp you are cooking at, volume of meat you put in, ect. 

I do not believe that getting a probe wet has any affect unless it is submerged for some time.

You need to play and learn your smoker but have fun. 

If you try this in your oven you will see its the same. there are differences from front to back and side to side. Try your mav in the oven you will be surprised.

You're not alone on problems with your Maverick.  I've got the ET-73 and was smoking some homemade andouille sausage over the weekend.  I was about three hours into a smoke and my Maverick went haywire.  This was a fairly low heat smoke at 130 degrees.  Here is what my ET-73 showed when it started having issues.


Like you the temps went up and down, but after a while they just stayed crazy high.

It was very cold outside on Sunday with temps in the teens.  I was running my probes in through a chimney and I'm guessing I was getting condensation traveling down the probe wires and into the probes.  I've got two new probes on order.
 
The BBQ probe was about an inch away from the meAt the other was in the center of a picnic shoulder. Not much different for the way I've used several other times. The outside temps were actually nice for NC this time of year at around mid 60's. the problem must be in the probes since the meat probe worked just fine as a BBQ probe. Will do some more experimenting and I still need to call customer service. I work the exact same hours as they do. Will update.
 
I had one meat probe go bad really soon.  The replacement is working fine.

I also had a bad habit of leaving the pit probe in the pit without cleaning it.  It started acting weird.  I took it inside and carefully cleaned it.  No more problems!

Now, I know to keep the pit probe clean, too!
