I was watching a huntin show last night and it must have been sponsored by Bradly Smokers because the host did a segment/commercial on smoking a pork roast.  The funny thing was he took the roast and put it in a oven bag when he put it in the smoker.  He did make one little cut in the bag "to add smoke flavor".  So what is the point in that.  To me it kinda defeats the purpose of advertising a smoker.

OMG that sounds so odd, I agree, what's the point? Why not just put it in the oven? But then again, I have never done that so I really don't know how much smoke flavor it would (or wouldn't?) add. I have used those bags in the oven when I was younger. Silly girl, I finally learned that all I needed to do was marinate the darn thing.

If he did that I doubt it was sponsored by Bradley but it does go to prove that ya ain't gotta be smart or know anything to be on TV

I get the same thought about casings on sausage.

That's why I've been experimenting with smoking Beef sticks & sausage without casings.

Sure, I'm sure they don't block all of the smoke like a bag might, but I seriously doubt that all of the smoke gets through to the meat.

Bear, We quit using casings on sticks for that reason also.  The mix we generally use will stiffen up after being in the fridge over night.  So after it hardens up a bit, we are able to shoot it up to 1" diameter or more on the racks.  It works great.

More idiocy coming from the hunting cartel.  I love to hunt, and used to love to watch hunting videos and TV shows but they have gotten so ridiculous that I have given up on them.

I am with you.  I hunt anything I can as much as I can but I still find myself watching all the cooking channels more now then the hunting channels.  There are still a couple shows I like to watch on the hunting stuff, but not many.  I like Duck Commander, Jim Shockey and the Bone Collectors.  Well and of course Tiffany.

It seems to me that if they are gonna use a bag the next step would be liquid smoke

Thanks Matt,

The first time, I put the mix in the fridge over night. Then rolled them by hand the next day. Then left the sticks in the fridge over night (uncovered), before smoking. That worked good.

Then I finally got my LEM stuffer, so I shot them through the stuffer as soon as I mixed the meat, cure, and seasonings. They were a little fragile. Then I put the sticks in the fridge to stiffen up, before smoking.

Next time I will put the mix in the fridge again like the first time. Then shoot them through my stuffer. Then put the sticks in the fridge over night again (uncovered). Then smoke the heck out of them. That will probably be the best way.

Thanks again,

Bear

Bear,

another thing is grinding.  We found that it holds together best with a couple runs threw the grinder.  If we are doing large batches, we grind the meat (deer) and mix in pork or beef and seasoning pack, then run threw grinder again.  The finer grind holds together a lot better plus the grinder helps blending everything together better.  Smaller batches I will use a mixer and that breaks it all down better also.

Now I have sticks on the brain.  I need to see if I have any meat left in the freezer.

that might be a good idea to use a baking bag in the smoker because an ex girlfriend used to use those bags for pot roasts and the meat always came out juicy and tender.

Hmmmm, don't think your GF was trying to get smoke through the bag into the meat, however they are good to hold moisture.

Those bags are great for marinating in, it keeps the liquid close to the meat so it doesnt spread out in the pan and not touching the meat, so you can use less liquid, and its easy to turn if its tied, not to mention the clean up. Toss it out - no muss no fuss.
