Ok, im sure the type of smoker may influence the dessision, so lets go with what I use. Masterbuilt pro dual fuel two door. I use it as a gasser.

Well....I'm back to edit this after thinking about it for a short.  I have to admit that smoking pork chops and having them come out tender and juicy seems to be my nemesis.

So the smaller thinner cuts are more challenging?
 
With out a  doubt for me it's brisket..They always come out tasty and tender, but really dry.. Tried many different ways, always the same result. I"m not giving up on brisket,yet.

Assuming to get it right -

Easiest:  Pork Butt

Most Difficult: I'd say Whole Hog is the toughest, but most people are equipment bound and can't do that anyhow.  Now if you are talking competition, I'd say chicken.   But this is generalized, so I'll say brisket

How's that for a non-committal answer?

I found that Cheese and Brisket are the most difficult for me.  I have had great luck with whole hogs.
