What type of ad-hoc temp control to add to my ECB

I made one for my little chief using a temp control dial box from an electric frying pan. works great. Just took it apart and wired in a plug that I can plug my smoker into. and I drilled a hole in the smoker for the probe to go in. I found the temp control at a thift store for like a buck. I have made two of them now and they both work great. Been using the one for 6 months or so. Still works great. Just my two cents. As for it beening safe or not, thats why I have it plugged into a surge protector. Well just wanted to give my idea out to you. Later
 
Why would you want to turn the temperature down on a Little Chief? Are you going to smoke ice cream? Just Kidding.
 
In my case I did the temp control so I could turn the temp up. I have also made an insulated box for it and I am in the process of adding a 1000w element to it and still having the 250w element in it and being able to use them both. I was just throwing out what I did to make a temp control. But no problem. If I was reading my post I to would wonder knowing the little cheifs are a cooler smoker.
 
I like this idea. I have several electric units (fryers, skillets etc...) that have a temp control on them. I don't know why I did not think of that before. Great idea.
