I think I'm going to try doing a whole chicken or some leg quaters and then pull it so I'm looking for some good ideas for the meat. I'm thinking just some sandwiches to start with but maybe quesadillas? Any ideas?
 
hello, I smoked a whole chicken the other day. I found a brine mix on here and brined the chicken over night then smoked it. THe best chicken i ever had. I think the mix came out of jeffs 5 day course. if not search main page for brine, and give it a try. GOod luck post what you do.
 
Smoked chicken makes some good chiken salad sammies. Chicken parmesian, Chicken cordon bleu, stuffed chicken breasts, gesweet and sour chicken, chicken chow mein, you can amke anything with chicken!
 
I love lemon chicken!! Just cut up a lemon shove it inside. Mmmmm!!
 
I made a Chicken Alfredo with bowtie pasta.. Added some olives, some sliced carrots for color and sweetness and some alfredo sauce..

You can add bell peppers (yuck) for color or sliced zucchini or whatever you want. Yummy

(Except for the ungodly bell peppers...Nasty little buggers they are!)

Brine that chicken over night, rub it down, pop it on top of a beer can, shove a half of an onion in the neck, smoke her til she's done, feast on it for dinner, make smoked chic salad with the left overs...It will be the best...the biggest must do is brine...I still can't believe the difference in the meat since I started brining.
 
Only thing I could add is to do two!

We have 4 people (2 adults) and tear through 1 and a half, then the rest of the second we use like Shellbell suggests.

I got a double beer can shooter that sits nicely in the Kettle

I need to try those mexican dishes of gypsy's up thread.

Orange, lemon or lime slices in the bird cavity aregreat too keeps it moist and adds flavor at the same time.
