I'm looking to marinate some pork tenderloins with some char shu marinade, and I'm wondering what smoke would go well with the oriental pork Q?  Apple, Cherry??

In this situation, I think your smoke should match the characteristics of the flavors you're adding to the pork...I have no idea what char shu is, but if it's sharp and strong, go with hickory or cherry...if it's a milder flavor,  apple/pecan or other fruit-woods may be to your liking. In either case, the smoke shouldn't be overwhelming, or the dominant flavor/aroma.

I think the apple or cherry would be a good choice.
