All I am totally new to the smoking thing and just got a Masterbuilt 340G. I see that everyone is talking about using the pellet trays and tubes in stead of wood chips. I was wondering if someone could point me in the right direction on what size pellet tray I would need for the 340G? Thanks in advance for any ideas!

My suggestion (and this is just my opinion) is to use your new MES without any modifications or additions a couple times to see what you like about it and what you don't. Then, if you find you would like to alter the smoke flavor profile, I would suggest the Amazin' Pellet Smoker 12" tube.

One additional item I would strongly suggest is a digital probe thermometer. The thermometer on your smoker is likely not very accurate. My preference is a digital probe thermometer with remote readout, but there are plenty of options out there.

Oh, and welcome to the forum and the hobby!!! Let us know how your cooks go.

I can only speak for myself...I prefer the tube(s) over the tray.

As far as using the 12" vs the 6",it depends on the length of the smoke. With the U-bolt mod you'll get about 3hrs out of the 6" and 6hrs out of the 12".I have several of each just in case I need to add a second tube, all depends on the cook time.

Some of it's dependent on where you live. If your at a higher elevation then the tube is recommended. The biggest advantage to running the tray over the tube is the ability to burn dust instead of pellets. Dust burns cleaner then pellets and gives off less heat. The tube isn't designed to burn dust.

Pellet tubes do have a tendency to put out a little more smoke than the trays. I have a hard time keeping pellets going in the tray compared to dust. I have used both.

Great advise , and some I like to give myself . Use it as is to start .
