Im new to this site and smoking and I keep seeing AMNPS being talked about. What is it?

So I asume when using this I remove the smoke pan from the MES and just set it on the heat elements?

Search Utube for AMNPS the pellets have to be lit with a torch then placed on the lower level away from the heat
