What do you do with the "extra" bacon?

OK, so bacon comes vacuum sealed in that nice tight package. Once you open it up, how do you store it until the whole pound is used?

We tend to roll up what's left and stick it in a large ziplock bag, then force as much air out and stick it in the fridge. I just did that with a little less than a half pound of bacon and was wondering if there was a better way? Just curious, how do you store your extra bacon?
 
we just eat it all. i just cooked 1.5 lbs for BLT's not ten minutes ago and it'll all be gone tonight, i'm sure.
 
I lean the opened package against the wall of the fridge so the juice can't run out, and eat it up over a few days.
 
put it in a 1 gallon ziplock,squeeze out the air and in the fridge...pretty much what you do. I like some of the other methods mentioned; around here if we cooked up 3 lbs we would probably eat it all!!!
 
Bacon doesnt last that long round here. Actually pork in general doesn't la.....be right back folks, where's the tongs?

Zip lock bag...roll up to get out air...store in fridge.

Cook all in package Drain on paper towles Put in sandwich bags indiv...freeze... pull out of freezer when you need bacon bits.

Freeze in zip lock bags for later use.

That is what I do with left over Bacon....havent bought store bought Bacon in long while... I make BuckBoardBacon and CB,,,and belly bacon...always have to "Store the left overs"

Make 25lb to 30 lb at a time...BBB..CB..and Belly it wil vary.Hope this helps.
 
I fry up the whole pkg and freeze the leftovers for later.
also i save all the bacon grease in a pyrex bowl for seasoning other things i cook.
 
lol...

kind of the same in my house, when doing ABT's, some of the trimmigs go towards a dinner of bacon and eggs later in the week(of course with some of the leftover ABT's).
