What can I smoke at below 160°F

Steelhead are trout.
There seems to be as much evidence that they can really go either way. To me, they cook like a salmon and taste like a salmon so.I refer.to them as salmon. When I'm eating one, i don't think too much about their migratory habits. But you are correct they are a trout.

Here is what the steelhead looked like after the smoke. It smoked on cherry for 2.5 hours at 135° to 150°. And finished in oven, seared with lemon and fresh ground pepper blend.

Steelhead are so delicate, less is better and yours sounds just right!

Screams for a good bottle of Washington’s best bubbly.
