What can i do with smoked brisket fat?

lately when i've been smoking briskets i've been trimming most of the fat cap off and then laying it on the brisket during the smoke. this way the fat still renders over the meat but i can easily take it off after the cook.

So i saved some last time so i probably have 1/2lb of smoked fat in a zip lock in my freezer, can i do anything with that?
 
You can render it down and use it to sauté with. If you have enough saved you can even use it to make French fries with or other fried items. If you are up to making confit you can use the fat for that.

Those are just a couple things.....
 
both are great ideas! i have a bunch so i'll probaby experiment with a few things...i like the sautee idea. never made a confit but have heard that term...looking it up now
