Some sausages are made with beef and some are made with pork and others are made with both or other meats. But lets stick to he basic beef and pork sausages. Would it be safe to say that to get the best taste out of deer sausage you should stick to useing it for sausages that are made with beef? Or do you find that it works just fine for both types of sausages?

Lenny, morning....   Some folks suggest pork with venison works well due to the mild flavor of pork....  Personal preference comes into play here....  Try both using small amounts...  do a fry test....   Dave

I prefer pork over beef added to venison... Plus its cheaper

I make summer sausage mostly, but this year I made venison sticks, brats, and German frankfurters.

I used to add ground beef but lately I’ve been adding roughly 30% ground turkey to the mix

I use both beef and pork!  About 70% deer and 20% bf and 10% pk.  Beef seems to make sausage firmer and the fatty pork gives flavor!  Make SS and jerky and snack sticks.  Lots of types to make!  Ring bologna

I have always used a 75/25 mix of venison and pork breakfast sausage in my summer sausage and snack sticks. The breakfast sausage helps with the fat content as I do not add any suet to my venison and the texture is perfect.

I would like to make some venison breakfast sausage this year, anyone have a good recipe or spice mix suggestion?
