After spending a considerable amount of time on this forum, I'm thinking I wish I had bought and electric smoker and a cheap gas grill. I may be able to cancel this order out and I might go that way- any recommendations?  Thanks- Paul
 
What kind of smoker did you order?

Are you having second thoughts on the charcoal?

I have a GOSM (propane) and really like it but after reading so much about the MES I kinda want one but I also feel the same about the WSM.

So I can't really answer your question but I think once the addiction sets in we want a little of everything.
 
Paul , if you're really stumped , do what you have to , however , if you get the (what did you say - Charmglow?) . IMHO - I feel you should go ahead and recieve the Smoker and learn it , as I was saying the other day on the PM , just don't put anything in the Gas side (like charcoal or wood - you can block the holes and if one opens while cooking with Charcoal  and you forgot to close the Propane bottle , Bam!!!) .

Learn to control the heat in all 3 ways and whet your skills on the cheaper unit , then when it's time to re-arm yourself with a pit with different challenges.

Start a log of your smoking sessions and review each smoke , then correct next time...

I canceled the smoker grill and am gong to pick up a Masterbuilt electric 30" smoker tomorrow. Does anyone know if I,m going to need the Maverick 732 thermometer with this smoker? If not, I will have one for sale. Thanks- Paul

I would really look hard at the MES 40 - once you get into this gig you are going to want the room. As for the 732 - yes you will want to get one no matter what smoker you end up with and if going with the MES line you are also going to want to get an A-MAZE-N Smoker

Hello All. I just built a smoker from a 5 drawer file cabinet. before i start smoking what should i do it. I have already lit a big fire in it to burn out any toxins that may have been their.
 
You might as well go for the MES 40. They run about $300 at Sam's Club. I have the MES 40 and I'm so glad I went with the larger one. Keep the Maverick to use with it and check the cabinet temp of the MES, as most people say they are off. Once heated up, mine only runs about 3-5* off and I can live with that. Scarbelly mentioned the A-MAZE-N Smoker because the MES doesn't put off smoke under approximately 180*. No problem if you are smoking at hotter temps.
 
Like an old timer told me , one time..."Look at the size you thought of and get one size bigger!"

The AMNPS will give you the constant thin blue smoke (TBS) that the MES can not do without having to open the door and reload. There are many testimonials to using this unit with the MES for both hot and cold smokes.  

The reason for the larger smoker is that you are going to get the rest of the family wanting to come over for some great smoked food and with the 40 you  can handle that.  You can also handle larger cuts of meat and poultry
