Spending the weekend ar a friend's lake house and have enjoyed using a pellet grill for the first time. Pit Boss Lexington is a small quarters but has done a good job using O
Comp blend pellets. Not many pics but did party ribs and rack of spares last night. Ist time for the individual slices party ribs but will be doing them again.
Loved the all-over bark and flavor.
2 sausage fatties this morning and a 5 lb bologna chub.
Got a brisket flat rolling now at sitting at 195. Just waiting on tenderness and she's going for a sleep. If we can find and empty cooler 😆

Rubbed down with Meat Church Holy Gospel and added Kosmos Q Brisket mop to the foil boat.

Thanks Justin and got it cooling down now before the sleep.
Still feel tight In a couple of spots so hopefully the rest will help.
Just add the peach baked beans with th rib meat added from last night.
Cooked the 3 racks for 6 people and only had 4 bones left. They were definitely a hit.

Flat was just ok as it was a little dry.
I'd planned to inject but forgot to bring an injector 😔.
BB were a hit and so was the cream cheese with pepper 🌶jelly.
No time for pics with this crowd of infitiles but everyone went to bed on a very full stomach 😴
