For the ribs, I used Jeff's Original rub and BBQ sauce. I added a bit more salt and some chipotle.

Three racks were foil wrapped and got done faster than I thought and were fall off the bone. Everyone loved them!

I used all reader suggestions for the shoulders with the exception of the Kosmos Q injection.

The first pork shoulder got Kosmos Q original pork injection overnight. Injection mixed with honey crisp apple juice.
I then made a simple SPOG rub and applied it 45 minutes before putting in the cooker.

I made a South Carolina style mustard sauce for this shoulder. Was fantastic. Never had a South Carolina sauce before but will have this handy from now on. I used the Bubba Q recipe.

The second shoulder I did a simple rub of SPOG and added paprika and sugar.
For this shoulder, I used Jeff's BBQ sauce and thinned it a bit with some pan juice.

Everything turned out great. The Kosmos Q injection kept the pork nice and moist and had a very well balanced flavor. I would use this product again.

The non-injected pork had a nice, natural pork flavor. I thought the pork flavor really shined through on this shoulder.

Ribs took 5.5 hours, shoulders took 9 hours both at 250 degrees F.

Looks like you got a lot of experience there. Injection, simple rubs with just a few minor tweaks, and two different sauces! I'm assuming you had a chance to taste the meat before adding sauces and after adding sauces as well.
It is cool to be able to compare the flavors and differences and figure out which ways you prefer to go.

I LOVE sauces but I rarely put it on my meat and leave that up to everyone to do once the meat is on their plate. This seems to be a way to keep everyone happen around here. I was once told that happiness in life simply means having options. As odd as that sound, after a little time thinking on it I believe it was an accurate statement :)

For those interested...

Yellow Bubba Q Juice / South Carolina Style

2C Yellow Mustard
1C Cider Vinegar
1/2-1C Brown Sugar
1-2T Sriracha or other Hot Sauce
1tsp Blk Pepper
1tsp Gran. Garlic
1tsp Gran. Onion
1/2tsp Salt
1T Worcstershire
Cayenne Pepper to taste
Combine all and simmer to combine flavors. Reduce to desired thickness.
Makes 3 Cups.

The Stumps Baby performed admirably. A very well thought out design. The door thermometer was very accurate. Charcoal use was about 1 pound per hour.

The only issue I had was after about 10 hours, so much ash had built up that it started blowing into the cook chamber.

Next cook, I will dump the ash pan every 4 hours and give the grate a shake.

Overall, I love the stumps cooker. It is all I imagined it would be. I was surprised that my food got done faster than any other smoke I ever did.

Sounds like a great meal and a perfect day. Now I'm looking forward to pic's of your smoker in action. Want-ya get started on that JC.

That Yellow Bubba Q juice was awesome. Added great flavor to the pork. Never used mustard sauce on my pulled pork but am sure to do it again in the future.
