Weather’s too nice, needed to smoke.

Bought a case of butts at Sam’s this morning, rubbed up a couple and tossed em in the MES about 0800.
Cherry wood, everything looks good. Will do a couple of chickens and some beans for the guys at the shop for lunch as well. (Pics of that to follow)

250 and steady, with TBS...

I grew tired of the chip loader, and didn’t like futzing with a pellet tray, so I came up with my own mod.
That amount of wood is all I need for a 12-18 hr smoke, and I don’t need to open the door at all.

That all looks great! I wish I could smoke while I was at work.

I'm interested in your wood setup. I saw where you explained it above but did you have to do any other mods to it? I'm assuming you disassembled the chip loader tube and made a stand do sit your wood box on above the heating element? Do you add any charcoal? Genius if you ask me I'd love to give it a shot. I have the same model smoker except the Cabela's sportsman edition

Thanks for the likes guys!
I’ll post some pics of the finished product in a few hrs.

(The chicken and beans disappeared before I could take a picture of them on the table)

Where did you get that tray? That’s what I need. I’m tired of filling the chip tray every 20 minutes and more times than not over filling it. I’m sure that’s what destroyed my first master built burning chips outside the tray. How long did you say you were able to get smoke on one fill?

All looks good from my screen, wish I worked with you.

Point for sure
Chris

Fabricated the base out of stainless, smoke generator started life as a 1/4 20 ga stainless hotel pan, drip pan is water-jetted out of a heavy stainless 1/1 hotel pan

It will provide pretty even smoke for 12-18 hrs on one fill.

I sent you a pm with more details.
The trick is that my smoke generator works by essentially destructively distilling the wood and then burning the resultant material at a more or less constant rate rather than just burning the wood primarily and dumping creosote all over everything. I’ll post some pictures of what is left over in the generator after the cook.

So, as you can see, the volatiles basically condense and drip back to the bottom of the pan where they burn more or less completely.
All that’s left is carbon (which makes great lump charcoal when you accumulate enough of it)

The way the system is set up, there is enough heat-soaked thermal mass, and the air flow is regulated such (via the specifically sized drip pan and modulated air intake) that there is more or less constant smoke production regardless of whether or not the element happens to be on at a given time at typical cooking temps.

Thank you very much for your response. That sounds like I would have to learn a whole new skill set. The responses I have gotten from my posts, and reading other articles have helped me improve my smoking skills. I’m not ready to start fabricating this. Is it possible to get one ready to go out of a box.

I've fabbed a few for guys around town, and I probably have enough pieces-parts to make you one. What smoker do you have? (my most recent is a Sam's MES40, but as long as your racks are more or less 20"x12.5" we should be good to go. Send me a PM and we'll work out the details. I'm not really trying to be in the business, but I can probably make them for not much more than materials (unless everyone loves them and we all decide to quit our jobs and hit the professional consumer electric smoker circuit [Rah Rah!!!]:emoji_laughing:)
