My first time making jerky and wow was it a success! It may sound like I'm bragging but it is the best jerky I have ever had. I'm mostly saying this to encourage any of you who haven't tried it to go for it! Easy and sooo good.

Sliced 1.75 lbs of elk cross grain and soaked in a little water with cure and salt, paprika, and some old bay. Took out and added lots of fresh cracked pepper and pressed into meat. Smoked with hickory until dry with a little flexibility (just before they get brittle). Ended up with .6 lbs.

nice lookin jerky, and elk yet too!!! i have been slicen across the grain too for past cuple years. i bet its good, pop a cap and handful of that peppery bacon....... good job!!!
