My wife picked up some wagyu beef ribs a couple days ago. Cooked them on my Rec Tec 700 yesterday. I kept it simple to let the meat be the star. We rubbed with Diamond Crystal salt (highly recommend), pepper and a little Traegar beef rub we had. I don't recall how long they took because I just focused on taking them to 203 degrees. When I took them off I wrapped them in parchment paper and wrapped in a towel. I sat them on the hopper lid until we were ready to eat. They turned out awesome. That cut of meat is delicious. I could have done a better job on the picture but I was busy cooking I guess
