It may not make any difference but I wanted the bacon to be as done and crispy as possible (the only way my wife will eat it). I cooked the fatty on my lowest rack and even though I was cooking at pretty low temp about halfway through the bottom looked more "done" than the top so I decided to turn. It made me feel good and it turned out looking great on all sides.
