Venison summer Sausage Done

I used Hi Mountain Summer Sausage kit. Half each of venison and pork. Ended up with 4 lbs. While I was working on sausage meat I had the bright idea to toss jalapeno's in the dehydrator for a hour thinking this would dry them off. It just made them mushy.

Got meat all mixed up and added jalapeno's. I used 1 per lb. Added some of that farm style cheese. Boy stuffing with these casings is so much easier! Let rest over night. Smoked in MES40 one hour at 100 than 3 hours at 130 with Lumber Jack CB dust. Than into sous vide at 153 for 3 hours. Ice bath than rest over night. I had to break my 18 hour fast this morning I do weekdays to try this! Very good. Great jalapeno taste and cheese comes through also. Not as much venison flavor as I would of wanted but it very good. We will call first time making a success. Thank you everyone that helped with this. As much as I dont want to I will be sharing this with friends.

Also made some of my Habanero Garlic Honey pecans. I attempted to make half Keto. I used some honey I made from Allulose several months ago. Not giving up on this yet, maybe jcam222 jcam222 can help. Not sure if it was just to old or what but does not taste right. Maybe make a honey using one of the brown sugars? Oh well, I tried. Will need to make some more regular as this not going to be enough to give to my regulars.

Brian the SS looks awesome! So on the Allulose honey do you like the flavor of it in general? What is it that tastes off in your finished nuts? I still like my keto dandelion "honey" the most. It's dang hard to tell from real honey.

Thanks Jeff. Had kind of a old stale flavor. I think it just sat to long. It had a very strong aroma when I made it. Every time I opened up my cabinet it would hit you in the face for months. There is a recipe using brown sugar I am thinking of trying. I had thought about just using the sugar but it needs more liquid to be able to blend.

Thanks Keith. Went over well at river. I got to give a friend a chub still. I have not been able to get my hands on any venison in couple years. A guy was having a doe kill off and said he would give me one but never happened. I grew up on and love venison but dont hunt.

So I took some of these out of fridge today and now they taste really good. Either needed to sit or my taste buds where off? They stickier than my normal but this will work!
