Venison summer sausage/ bologna weekend

‘Tis the season I guess. I figured I would post my Friday evening/night Saturday project. A couple of friends got a deer so we got together for sausage/bologna making.
Here is what we ended up with for ground meat.
100lbs of venison
34lbs of pork
10lbs of beef

Owens seasonings used
10lbs of pepperoni
25lbs summer sausage
25lbs Jalapeño summer sausage
25lbs Red barn seasoning

Made 10lbs of pizza seasoned using an AC Leggs mix

50lbs of Lebanon Bologna

Everything was ground mixed ground again and stuffed Friday night.

Didn’t get many pictures of the processing because it is hard to take pictures when you have meaty hands.

Smoker is loaded. It is hard to get a picture of all 3 rows. Big socks are Lebanon bologna. They hold around 10lbs each.

Pulled everything except the big Lebanon tubes and hung it in 38f garage.

If I had it to do over I probably would have started earlier Friday or ground everything Thursday. The night got long but was still fun. It was a lot of stuffing for a 5lb Cabelas stuffer.

great job Peach. that is a lot of grinding and stuffing using a 5#er.
 
That is impressive for a 5lb'r... I stuffed 30 lbs of sticks today (in the smokehouse now)... My plastic gear took a chit right in the middle of the process... GET THIS ... it wasn't the teeth that took a crap.. it was the threaded brass piece in the center.. it stripped out ... luckily I had a spare gear... gonna get the new LEM 5lb'r...

The 500 gallon tank was about maxed out.
The cable set up I made inside sure worked good for hanging.
