I just got a 30" MES last week so I decided to try venison bacon as my first smoking endeavour. Bacon turned out good, I didn't cut it with anything so it turned out a little dry as is to be expected but I wanted to try it anyways. I also made some Pepper snack sticks which turned out great. I look forward to many more wild game treats from the smoker!
