I managed to find short ribs (kind of difficult in my area) so they became the star of the day. My wife questioned why I had left the knives off the place setting, and I told her that we would not need them (I'd not made this dish for her before this day - she had never experienced tender short ribs).
The meat was seared, then nestled among the vegetables with a bit of beef stock, then braised for about 3 hours.
Roasted Brussels sprouts with bacon and drizzled with balsamic reduction as a side
On a bed of noodles, the short ribs were dressed with their reduction sauce. Roasted Parmesan crusted asparagus accompanied them on the plate.
A chilled Prosecco started the refreshment, small plates of smoked Gouda, smoked Havarti, and salami as an appetizer, and a Turley Zinfandel accompanied the beef.
To my relief, the dinner was a success as I lost count of the times she commented on the beef. My only worry is that she will expect a bit better next time!
