Aloha,

I just closed a deal on a pre-owned Tilia vacuum sealer.......It should be here in a few days.

 If I were to purchase a roll of the 11" size bags, would I be able to make smaller bags from them......AS you can see from my question, I've never had any experience with these vacuum sealer units...

I would appreciate any information you could send my way

I have a seal a meal myself. The bags come in a roll so you can make the bags any length you want but will still be 11" wide. Hope that helps. Some folks make the bags longer so they can wash them and reuse them.
 
I have rolls of both 8" and 11" wide sealer bags.  We tend to use the 8" more then the 11".

As stated above they can be made to any length.
