Using mustard to rub on ribs and butts. Pros and cons

I rub my butts and ribs with mustard before i put them in smoker. It does good but why?

I did it once or twice.  Seemed like a waste of mustard to me.  Folks say it makes for a better bark.  Personally I haven't found that to be the case, but lots of folks swear by mustard.  I used EVOO for a while too.  No longer for either.  The one thing both do though is keep the meat from sticking to the grate.  Spraying the grate with veggie oil solves that issue.  All I have to do is remember to do that, which is getting harder and harder these days.

I will do this to get the rub to stick better and mayo works just as good. It is not really needed but i think it keeps more rub stuck to the meat. I don't find it adds to the bark or anything. It all dissolves away anyway.

Rub will stick to it no matter what. I found the step as uneccessary, just a waste of time, mustard, and creates a little mess. I also found it doesnt add more bark. I also never oil my grates or meat and never had a problem with it sticking

Mustard should be saved for burgers,sausages and hot dogs! Invest your savings in more meat to smoke!:biggrin:

I've used mustard and oil.  Mustard does seem like waste IMO.  Oil works fine too and is dirt cheap.  I want to try it without anything at some point.

I'll use mustard now & then to kinda change things up a little ! Sometimes will toss on some EVOO or peanut oil ! Most the time I don't use anything, just toss on the rub !
