Using MES 40 as a jerky dehydrater

So I did this last time and it worked great but seemed to take a really long time to actually dry the meat.  I think it may help if I get some more air flow.  Anyone have any thoughts?  My idea was to use a small fan on the end of a tube that sticks into the smoker on the side.

After you are done applying smoke it sounds like a fine plan to me hahaha.

The other idea I can think of would be to get a computer fan that sets over the top of the vent hole and suck the air out of the smoker there by causing a draft going from bottom to top to exit the smoker.  

I'm not sure which approach would be better but that is the only other simple idea I have.

As for complex ideas... I installed a convection oven fan in my MES to circulate air and smoke.  This is quite a bit more extreme than what you may have in mind :)

I've been battling some things here and there with my mods and I want to make sure everything is working well without any incidents before I post in detail about them.  As of now I had a couple of on/off rocker switches melt down in the controller box I built for my HeaterMeter controller.

Once all systems consistently a go and I get a feel for what they are doing I will post away like crazy :)

Tomorrow I will smoke about 4 pounds of sausage for the first time ever and I will put my new on/off switch and controller through it's paces for about a 6+ hour smoke.  I would have done the smoke over night tonight but I want to be able to sit and watch it just in case anything goes wrong with the new switch or controller box.  I didn't want to be asleep should something melt down or spark up. I'm just being safe and thorough :)
