I have been wanting to do this for a while and after sandyut sandyut posted about doing ribs without foiling I had to give it a shot. They have always turned out amazing using SmokinAl SmokinAl 's way (minus leaving membrane on), but I had to try no wrap and leaving the membrane on. These were also my first ribs that were not spare or St. Louis cut.

Here goes nothing...
Rubbed and vac sealed them the night before. Next day slapped them on the grill @ 225' - I used a modified version of to see if I could get a bark that the kids would actually enjoy.

I started probing them at 5 hours because using Al's foil method mine are usually done on my grill after the 3-2 portion of 3-2-1. They did not pass the probe test until 6 hours. Here they are...

They turned out pretty ****'in good. Everyone got seconds. The kids said it was better than sushi and my smoked butt. I am sure a huge part was the rub, but I still want to do side by side with the same rub, foil vs non foil, which is what I should have done this time around. I am also anxious to try this rub/method on spares and a butt....

Keep It Simple Stupid worked out well today.

they look good, I never wrap mine. looks like you'll just have to suck it up and smoke some more, this smoking thing is hell!:emoji_wink:

Hahaha It is hell. So many combinations that need to be tried...
 
Nice!! I don't wrap anymore. Just add multiple layers of flavor. Coca Cola, Tiger sauce, pineapple habanero glaze, honey, brown sugar, parkay margarine and spritz with apple juice from time to time. They are done when I can lift with the tongs and they try to break in the middle of the slab. Works every time. I'm old school stick burner sort of guy.

I wrapped a couple times, they were pretty good, but I prefer not wrapping. Less to mess with during the cook and still very delicious. I didn't feel like wrapping them gave me any advantage. Your ribs look awesome.

I've always been a 3-2-1 guy, I guess because that's the way I "learnt" to do it (though I don't wrap brisket). Thanks for the post. Your ribs look amazing. I'm going to give this a shot next "rib day".

Nice looking cook. I tend to go with the expectation of my end result when considering wrapping or not. Sometimes I like my ribs to have a good hearty bark and actually be a bit on the dry but still tender side. I don't wrap when I want this kind of finish. I also like ribs that are moist, juicy and nearly falling off the bone. When I want this, I wrap them.

My approach to BBQ is that there is really no right or wrong as long as you use safe food handling practices.

My measure of success is how close I get to my initial vision of the finished product. I find that this approach makes me far more open to experiments than always going with the tried and true.
