OK I got the UDS all burnt out and wired out. I assembled it all together and seasoned it on Sat. night trying to get it ready for some Q on Sunday.





Please notice the inlets and my ash pan. All this was done prior to joining SMF and getting all the gritty details on UDS building.

I put on a small briskett (4.2 lbs) yesterday and I used Lump for the 1st time. I didn't really like using it. Anyhow I was under some time issues and kind of rushed the process which i think may have caused the drops in temps through out the cook. It didn't seem that i ever got the lump to where is should have been before putting on the briskett.

Or it could be the inlets, or the placement of the fire basket (14"x14" x 5" high box made of chicken wire). I have an ash pan with holes elevated 1in from bottom of drum. My basket sits on the ash pan. Inlets are about 4 in above bottom of drum.

The briskett came out OK, (1st time smokin briskett) it was a little dry but the main problem was the rub i used. Id had too much salt. Overall the briskett turned out good for the 1st time.



 
I would think that the air inlets should be lower and most fire boxes sit around 3 inches off the bottom. Could be wrong though.Still not bad for the first run. All a step in the right direction.
 
It's looking good!
My air inlets sit below my coal rack...feeds air in underneath the hot coals to keep them going.

Your doing great though, good looking UDS.

Thanks everyone!

I am going to do another run at it later with some briskettes and ribs. This time, gotta make sure i get the coals nice and hot before putting anything inside. I will adjust it again.
