Turning Prime rib into an appitizer ideas?

We are having a guys weekend coming up and everyone is making different appitizer. I want to do something with beef, preferably prime rib but I’m open to other beef ideas. So far all I can come up with is smoking a prime rib and letting it cool and rest, cutting into 1x1 or so chunks and wrapping with my peppered bacon and putting on kabob sticks then under the broiler till bacon is crispy. Maybe grill up some onion and peppers on there and having creamy horseradish sauce to dip.

Should I cook it whole or chunk it put bacon on before I smoke?

Any other ideas for it?
 
I like to cut the cooked prime rib into finger sized chunks and quickly blacken with Cajun spice in a cast iron pan. You can dip it in your horseradish sauce or add some of the spice blend to some mayo,I prefer them plain.
 
Never heard of beef negimaki or Wellington before I’ll have to look it up!
B-one that sounds might good and simple, wouldn’t take long ether!

We like to slice it real thin & make fajita's with it.
You can smoke it first or just cook it raw with peppers & onions & fajita seasoning.

Maybe something like a beef shot. Cube it, wrap it in bacon, add a small chunk of Gouda, some rub, and a horseradish sauce.

Like the sliders idea and would do au jus if I did that. I am not really a fan of smoked prime rib actually. That said, beef ribs are the ultimate smoked beef appetizer. Cut them into individual ribs after smoking. Potentially cheaper also. Put a bottle Frank's hot sauce out if you do them.

I usually just make Cheesesteaks out of my leftovers, but you guys got some Great Ideas here, including the "Sliders"!!!

However I wasn't due for another Prime Rib for at least another Month, but you guys are really trying to screw up my Prime Rib Smoking Timing System!!!
