We had our Turkey dinner yesterday (sat).  I have smoked the holiday turkey dinners for over 8 years, started with a Brinkman, wore it out then got my first MES 30"  wore it out, and now on my 2rd MES.

15 pound organic bird with no added solution.

48 hr. brine, my recipe.

Water pan has green and Fuji apples,carrots,celery, sweet onion, white onion, 2 smashed garlic cloves,lemon,lime, orange, all quartered.  1 cup white wine, 1 cup apple juice or cider.

Wash turkey and pat dry. I place turkey on poultry stand, so it's standing upright, smear butter over bird, wrap with thin layer of cheesecloth.

MES at 225* for 9 hours using chunks of Asian pear and apple wood.

Add wood every 2/3 hours. Using .99 cent spray bottle with apple juice inside, spray and soak bird every couple hours, add wine or apple juice or both into water pan as needed.

Everyone at the table claimed it was the best tasting turkey they had ever eaten.

I'm to fat to pat myself on the back so I just smiled and said thank you. LOL
