Thanks for the quick reply...this is the recipe (thanks Buzzy), I plan to use.   
 
Here is the original recipe

2 1/2 # turkey meat (I used thighs)

4 tsp. choopped garlic

6 tsp. chili powder

1 Tbs. paprika

2 tsp. cayenne pepper

2 tsp. ground cumin

1 tsp. crushed red pepper

1 tsp. oregano

1 tsp. thyme

1 tsp. coarse black pepper

2 tsp. onion powder

1/2 tsp. garlic powder

here is what I added for smoking it

1/2 c. water

1/4 c. evoo

1/2 c. dried milk

3 3/4 tsp. TQ

with the oil it is not as dry but is also not as firm
