i tossed a turkey in the smoker this morning. ive only done a few poultry smokes. normally brine them but i dont have a bucket big enough nor did i have the time this time. lol just rubbed it and tossed iit in. fuel is charcoals and cherry chunks. it has ran at 225-350 and is at 150* inside now. cant wait to see how it turns out unbrined. i hope my temp monitoring keeps her moist inside. report back later.

Brine is good but usually they are injected from the plant already so you should be ok.

since i had it in fridge i smoked a deer hart too. never done that before. most times it gets tossed in skillet or dressing. turned out pretty tasty. and was more tender than frying it. that mite have been the 10day age though too? trimmed, cut in sections, oiled up, and seasoned with salt pepper onion garlic. id rather done it with mesquite but the turkey was soaking in cherry smoke already. very mild Smokey outcome.
