OK OK pun intended, but was just curious what different people stuff their ABT's with. Made them for the first time this past weekend and they were a huge hit with the family and friends. I didnt get too elaborate with the filling. 1 pkg Cream Cheese, about a table spoon of rub, a splash of lime juice, and about 1/2 teaspoon of season salt. Mixed it all up and thought OMG what have I done. It was so salty it hurt your jaw when you tasted it. Wife convinced me to try it anyway, thinking some salt would cook out, they were fan-freakin-tastic. Cant beleive I went 32 years with out these in my diet. They were alittle salty, but nothing serious. Will omit the season salt next time. Sorry no Qview on this one, left camera at work friday.

That's the way great recipes are born, Trial and error. Next time you'll know not to add so much salt, and you'll probably add a couple more things too. Before long you're an ABT pro.

We like to add a little Mascarpone cheese(it's a little sweeter) minced sun dried tomato,chopped fresh basil and garlic. We have also found that we like a little Italian sausge in that blend as well.

A lot of folks lie to use jack and similar cheeses and other types of meats.
 
I tried something new (for me anyway) this weekend. Cream cheese with chopped turkey, diced onions and garlic. I didn't add any seasoning, but I think I'll add black pepper next time.
 
Procuitto (sp?), mozzerella cheese and a medium sized fresh basil leaf from my garden... nice and simple.

Another favorite...chopped shrimp and crabmeat mixed with a touch of blue cheese dessing...Mmmm.

Try packing them full of shredded smoky chicken salad and swiss cheese...

And for the not so faint of heart...finely dice a ripe habanero and mix into a brick of softened cream cheese with some crispy pancetta and a squeeze of lime...Woopee!!!

Here is one of my favorites...
8 ounces cream cheese
1/2 lb Fresh crabmeat (or canned)
1/4 cup minced onion
1 cloved minced garlic
6 strips meaty bacon

Cut tops off of peppers, scoop out the seeds and membranes. Drain crabmeat well and mix with cream cheese, onion and garlic. Mix well. Stuff peppers, cut the bacon strips in half and wrap a half strip around each pepper, secure with toothpick.

Smoke at 200 degrees over mesquite for about 1 1/2 to 2 hrs..
 
Perhaps your rub had a high salt content as well ...

I like to mix in some fresh minced garlic or garlic sausage and powdered Habanero ...
I'd like to try some goat cheese too!
 
I like to use pepperoni and cheddar / or cream cheese n salsa in mine .....great thread ,always lookin for new ideas

Looks like I need to get 4 or 5 lbs of peppers and get busy.

Got an idea, will try it this weekend, if it works out I will post it on here for everyone to try out.
 
I do something like this, but use chopped raw shrimp or clams-mostly around the holiday season.
 
Mix cream cheese, ripe avocado, garlic and onion powder into a smooth "paste". Stuff the peppers, top with a dollop of sharp cheddar cheese and wrap with bacon.

1 small jar pineapple preserve
1 block cream cheese
horseradish to taste
Mix well , fill them up and wrap with bacon.

This also works a very tasty dip, you just layer instead

Shred the cheese, then pinch a "dollop" between your finger and thumb, enough to make you happy, and push it into the creamy mix in the pepper.

Maybe dollop isn't the right word... a pinch may be better...?

I like mine kind of plain best. Just sliced in half, cleaned out and stuffed with some chopped smoked fatty, chopped mushroom, mixed in cream cheese and maybe some chopped onion with a hunk of bacon about the length of the pepper on top.
 
What is the world coming to when a recipe that includes smoked ground meat, jalapinos, onions, bacon, mushrooms and cream cheese is considered plain??? LOL

I have tried to do that, and insert just a portion of peoples posts, like I have seen done a thousand times before, I just can't seem to figure it out?
