I would like to candyize my glaze after my spiral ham is finished. I assuming it is kinda like creme brulee. Can anyone who has done this walk me through the method of torching the glaze like candy? I doing this for thanksgiving.

Well, depending on what's in your glaze it's pretty easy. You'll want a fairly high sugar content and then just hit it with a blowtorch. If you have a spreader tip it's easier, but you can do it with a pencil tip. Just keep the flame moving and do a small area at a time. I did like a grid pattern, basically divided the surface into 2" squares in my mind and doing each one, then moving on to the next. It's fun and REALLY freaks the wife out!!
