I just bought a MES Bullet and haven't used it yet.  On my first attempt I will probably smoke a chicken.  Would it be better to use the top grate or the bottom closer to the heat?  I told you I am a rookie, right?
 
haven't used a Bullet but it is very similar to the so called ECB by the now defunct Brinkmann. I do have a couple of those. I have always used the top grate for no real reason except I didn't want to have to reach down inside the hot smoker to extract my food if I didn't have too. Now whenever I happen to do a Turkey and a Ham, I used both racks with the ham being on the top. No beck over hoof here.
 
Thanks, I kind of had the same thought but I wasn't sure.
