Took the WSM out for a Spin

Been a long time since I have used the wsm. Also have not smoked ribs in a long time. Cant seem to get away from those vortex ribs. Got it all setup and going. Took off that Inkbird controller that does not control and put the DIGIQ back on. That thing works Great! Grate stayed right at 270 the whole time. That thing seems to even know when you lift the lid and stops so it does not blow smoke in your face.

Bark set and color good at 2 hours and wrapped. After watching Malcom Reed use his vinegar sauce in foil I made up some vinegar sauce and put into foil. Another 1.5 hours and ribs tender and temp 198. Put back on for another 10 minutes and brush with sauce. Ribs had a great smoke flavor and just the right bite but that sauce I just did not care for on the ribs. WSM performed perfectly. Only covered the bottom of ring with B&B charcoal and was plenty. I need to use this thing more often. I will be going back to the vortex ribs though.

Got some salty dogs ready for the prayer meeting on the river this morning. We even have a retired minister with us.
