What else is better than smoking some ribs?


This is my first time using sand in the water pan so I hope it turns out well.

I am doing a rack of BB with a store bought spicy rub that my wife likes and I am also doing a rack of St. Louis style ribs with Jeff's rub which I like!

I will be smoking at 225 and will be doing a 3-1-2 method for the St. Louis ribs and a 2-1-2 for the BB's.  I am hoping this will make them less "fall off the bone" and give them a little tug.

Here is the final product.  They came out really nice.  Great flavor and just enough tug to make them fun to eat!

I was really happy with the sand in the pan.  It was much easier to keep the temp constant during the smoke.  Once I got the temp dialed in, it never got out of the 225-230 range the entire 6 hour period.

What kind of smoker are you using ?
On my UDS it took longer to get the temp up when I used sand .
Thinking it had to heat up the sand first.
But I also was cooking a butt hot and fast (350 degrees)
the sand did keep the temp even across the grate.

I have a GOSM. (Pic in my avatar)

I got heat up to about 240 then put ribs on and dialed it back down to 225.  It has stayed between 225 and 230 for two hours and I have not touched it except to open the chip drawer and put a few chips in a couple of times.  So far it is much more stable with sand than it has been with water.
