Have you looked at welder blankets to insulate your gear?
 
Ive got to fire it up next week I've got an eye of round for dried beef and some bellys curing for bacon.
 
I wanted to cold smoke cheese this weekend but i can't get to the smoker 10 inches of new snow this week and there calling for below zero for a low on Saturday and I think the cheese would freeze

Welcome to Wisconsin, right? I think you are right though, the cheese would definitely freeze LOL
 
Well it' 20*F and dropping, lite breeze and my PB820D will be coming to life in about 15min. Nice thing about an unheated detached garage, out of the wind! Rubbed my butt last nite and the apple smoke will remind me of my childhood down on the farm, just like your great looking casserole.
