Should I rest the steak after smoking? Or is it better to go directly to searing after smoking? Also rest times?

It kind of depends on thickness of your steak and desired doneness you are looking for. You should rest always to let the juices redistribute.
On a thinner steak, smoked to 125 ish you should wait for it to cool a bit so you don't over shoot medium rare. If you pull at say 115 degrees you could probably sear right away... but still let rest.
