Got bored today and thougt Id just smoke some ribs. Had 3 racks of baby backs rubbed them down with mustard then my favorite rib rub. Did not do the 3-2-1 instead I did 1-2-1 just for kicks. Used hickory wood and kept temp at 230* on the last hr I mopped with Tulsa Jeffs B-B-Q sauce. I know 4 hrs sounds to fast but the results were right on the money. Had the grandkids over for vittles and low and behold I got a thumbs up from my 5 yr old granddaughter. Gentelmen and Ladies that made my day.

Would your 1-2-1 plan work for 2 racks as well? I am doing two racks tomorrow. I want my grandson to have the same look on is face as your granddaughter!!!
 
1-2-1 would work fine with as many or as few racks as you want Straycat. Each rack should be wrapped individually so it doesn't matter.
