Boy, those look good Tim. You and cowgirl make sausage yourself, alone, only two hands and arms, I tried it a few weeks ago, for 5 minutes, then put the meat back in the fridge and waited for my son to get home. You two amaze me.

I don't know about cowgirl, but doing these by yourself was a chore. Maybe if there was less (not 30 lbs) it would have been easier.

i do 12 lbs at a time its what seems to fit in my smoker and by myself its a chore, but well worthit

Addiction ... yea. I will be doing more. Will learn to be more uniform and make them somewhat shorter. There were a couple that were rather long.

I do good in the begining and towards the end they get longer and longer and longer

Depends and how late I get done too!

Last night I was packing 4 inch salamis and started day dreaming before I notice the bugger was almost 3 feet long. I like them small enough to put in the fridge and that would never fit!
 
That's what I will have to do. A certain length, so they will fit in smoker and fridge.
