Stash of summer sausage is getting low.
Heres the goods. Trying AC Leggs Jalepeno seasoning ( is pretty decent ) IMG_1386.jpeg
12.5# venison
12.5# pork butt
25# AC Legg Jalepeno S.S. Seasoning
28.35 g Insta Cure
36 g Amesphos
113 g minced garlic
40 g mustard seed
5 cups ice water
Mixed all until tacky
Stuffed in Muslim bags (love these bags)
Fridge Overnight

Pulled and let warm about hr while MES 40 was warming. Insert thermometers
1/2 hickory 1/ 2apple pellets in amaz’n tray.
Slow temp ramping starting at 140*-170*
About 10.5 hrs to 147*
Fridge for couple days

Looks really good! I started slicing and vac sealing like you do... works good!

That looks incredible! It's been some time since I've had a nice summer sausage. Maybe I finally need to try making it myself.
