It's been a beef kinda time around here spun a tasty TT thought about trying to spin the brisket but decided against that after reading of subpar results I will give it a try sometime if I can score a 22.5 WSM have been looking on Craig's list.:biggrin:
Tossed it on around 4 this morning same rub as the TT CBP,cayenne and ancho pepper,granulated garlic and onion,salt and a touch of white sugar. Smoking in the WSM over cherry and hickory.

  What temp did you cook it to?  My last two briskys have fallen apart when slicing.  I took them to 200-205.

Thanks Mike,can't remember when I pulled it but it must have been 195+. Are you wrapping them right off the smoker? I let it cool off a bit 5-10 min before wrapping.
