thought i would put some pics up of this combination. you look into the cooler or pantry and realize your running short of something...hate it when that happens! then the the game become "afoot". we need this so might as well add this and as we all know it escalates into this type of over thinking. there is Provolone, Swiss, Blue, Tillamook Cheddar, Double Gloucester (something new from Costco) and a sharp white Horseradish Cheddar (from Yancy's/Costco, new as well) these two are going to go either way we will know in another week. Kosher salt and almonds that are destined to be candied smoked almonds. the smoke was 2-6 hrs depending on product with mostly apple, combo of chunks, chips and pellets in a Smoke Daddy. one picture is the start and the others are 1 and 3 hrs in. cheese started coming off close to the 3 hr mark, it was very cool, high humidity so i added 1 hr to initial pull times besides we prefer a little heavier smoke than most.

ya, had to restock, we have family coming in and i know how these visits turn out....course cant complain they are showing up with the kangaroo and alligator that i had my long time butcher buddy bring in for me. let the fun begin...

Love the longer smoke times myself. Have not done anything less than 4 hrs myself.  Most my smokes have been at night, and have rounded the corner on amnps couple inches so do not really know excat time.,  Got 3.5 to 4 hrs. before it turned on  what I did moniter couple times. really cant tell different pellets, smoke, to me all smoke is good  on cheese. How can you tell unless side by side. Tasted farmers and muensters tonight which is pecan and is at least 4 hr. smoke. it is greeeat!  Did it on 2/24.  What is great is it hits you hard at first  and then you want more. let us all keep talking on  this.. Looks to get chilly again which is strange, but will do some more cheese.
