I have an Old Country offset smoker. I installed gasket around the main door. I smoked 2 racks of pork ribs the first weekend and 2 butts the next. I'm going to smoke chicken thighs today. I'm a full time service tech for Casey's general stores and a part time BBQ fan. This is only my second year of smoking but I have had good teachers. I also read the forum a lot. I welcome any knowledge and will hopefully post pictures of my chicken.
 
They turned out delicious. Brined over night. Oiled and rubbed. Cooked at 275 for 1:45.
